Drink it now or cellar for up to 5 years. No need to decant. Serbian winery Matijašević produces excellent quality, award-winning wines from about 15 hectares distributed in the wine region Šumadija and more precisely in the villages of Orašac, Kopljari, and Banja. The vineyards, which enjoy exceptional soil and climate conditions, are planted with indigenous grape varieties such as Prokupac and Smederevka and international ones such as Sauvignon Blanc, Merlot, and Pinot Blanc. SoviNoa is probably the most representative wine of the company and certainly the most famous. It is a young and very expressive wine that reveals all the aromatic charge of this grape. After the harvest and a short maceration, the wine ferments partially in oak and then remains on its lees for aging. This lively Sauvignon Blanc has a fragrant and intense aromatic profile with notes of peach and grapefruit, herbaceous nuances, and a touch of wood. On the palate, it is fresh and mineral, dry and well structured. It has a medium body and a strong acidity. It is soft and fruity with a long finish that recalls tropical and mineral notes. It is excellent with vegetable quiches, pasta with pesto and asparagus, but also pairs well with shellfish (especially scallops).
