Located in the Valpolicella wine area, in the province of Verona, the Le Guaite di Noemi winery is managed by Noemi Pizzighella who takes care of the company founded in the late 90s by her parents. The cellar is surrounded almost entirely by the estate vineyards, located 500 meters above sea level on basaltic and calcareous soils. Here the vines are protected by the Lessini Mountains and receive winds and breezes from Lake Garda. These conditions create the perfect habitat for the vine and the production of high-quality wines. The Corvina, Rondinella, Corvinone, Oseleta, and Croatina grapes used for this wine come from the estate's vineyards. According to the traditional Ripasso technique, after the first fermentation, the wine is passed over the Amarone pomace for a second fermentation. The Ripasso della Valpolicella by Le Guaite di Noemi has a brilliant ruby red color with garnet reflections. Its aromatic profile is intensely fruity with notes of cherries and red berries, vanilla and leather, and some balsamic hints and notes of Mediterranean herbs. On the palate, it is soft and round with silky tannins and excellent acidity. It is fresh and well-balanced and has a long, warm finish. It’s the ideal wine with roast pheasant.
