La Bollina is a modern and innovative winery in the Alto Monferrato, located in a wonderful estate, once owned by the Marquises Figari of Genoa, with a nineteenth-century liberty villa transformed into a luxury hotel, a large golf course, and immense chestnut woods. In this fascinating context, the vineyards extend for 28 hectares. For the most part they are spread with Cortese, the native vine from which Gavi is obtained. The other cultivated varieties are Chardonnay, Nebbiolo, and Barbera. The vines are planted on predominantly clayey soils and they enjoy excellent exposure to the south and south-east. The Armason La Bollina wine is made from Chardonnay grapes grown in clayey vineyards. The bunches, harvested when they reach optimal ripeness, are immediately taken to the cellar to avoid oxidation problems. This is followed by careful de-stemming, soft pressing and static decanting at low temperatures. The fermentation of the must takes place both in stainless steel containers and in barriques. This sort of doubling also continues during the final refinement, which has a total duration of 6 months. The wine has an elegant straw yellow color with some golden reflections. Its bouquet alternates woody touches and hints of tropical fruit, enriched by sweet spicy notes reminiscent of vanilla. On the palate, it is fresh with a persistent and elegant finish. This is an extremely food-friendly, modern style Chardonnay that will go well with smoked or grilled fish.
