Domaine Vincent Paris is one of the best-known and most appreciated in the Rhône Valley for the production of Cornas. Located on the Chemin des Peyrouses, at the end of the village of Cornas, the estate extends over 10 hectares of vineyards where the vines are grown in the most natural way possible, without insecticides or chemical fertilizers, in total respect of the terroir. The Cornas Granit 60 by Vincent Paris takes its name from the 60-degree inclination of the plots from which the Syrah grapes come. In these vineyards, the soils are granite and stony and the vines have an average age of about sixty years. The harvest is manual and, after fermentation with indigenous yeasts, the wine rests for 3 months in vats and is then aged for a year in used oak barrels, with the aim of preserving the flavors of this unique terroir. This powerful and elegant wine has an aromatic profile full of black fruits, spices, and licorice with pleasant subtle notes of violet. On the palate it is round and of great personality with firm tannins and a persistent finish that recalls spicy and peppery notes. It is perfect to drink now but can also age beautifully for a few decades. It goes perfectly with a lamb tagine with prunes or a tournedos Rossini.
