Cellar for up to 3 years. Serve chilled. Vasse Felix was the very first winery to be established in Margaret River in 1967 by the pioneering winemaker Dr Tom Cullity. Today the estate has four vineyards dotted across the region which benefit from an exceptional Mediterranean-style climate with proximity to both the Indian and Southern Oceans. The soils here also help to contribute to Vasse Felix’s unique style with a combination of schist and granite as well as gravelly loam which makes it an ideal spot to grow world-class Chardonnay and Cabernet Sauvignon. Their Filius Chardonnay is crafted from specially selected plots planted on gravel loam soils which are vinified separately and then later blended after 8 months of maturation in French oak barrels. To add complexity and a deliciously creamy texture, the winery does regular lees stirring or battonage as the young wine is maturing. The result is a classic expression of the cool climate Margaret River with enticing hints of apple pie, fresh cream and tropical fruit on the nose. The first sip reveals a well-rounded texture, medium body and well-built structure with a long finish featuring ripe mango, pineapple and crisp lemon zest. A great wine to hold in the cellar for a few more years or enjoy now with roast chicken, cheeses or creamy fish dishes.
