Cellar for up to 10 years. No need to decant before serving. Sphera is a family-run winery in the Judaean Hills, right in the belly of the Mediterranean Sea. It was founded in 2013, by husband and wife Doron and Sima Rav Hon. “Sphera” is a Hebrew word, referring to a full, transparent circle. This elegant image reflects the purity of Doron and Sima’s white wines, which are all created in perfect harmony with nature. Sphera work with an all-star cast of white grapes, from Chardonnay and Sauvignon Blanc to Sémillon and Riesling. The winery’s Signature White is always something truly unique, a blend crafted from the finest fruits of its respective year. While the exact proportions can be something of a mystery, you can always have faith that Sphera’s Signature is of impeccable quality. The nose is sharp and pure, with scents of lime, stone fruit, vanilla essence and butter, hinting at the 10 months that the fruits spent developing character, inside French oak barrels. On the palate, this first impression expands into a buttery, medium-bodied experience, alive with notes of citrus, tropical fruit and graphite minerality. The finish is long, with considerable tartness. Available in limited numbers. Consider pairing this wine with white fish, chicken, or a goat cheese salad.
