Sphera’s founder Doron Rav Hon studied winemaking in Burgundy where he fell in love with the region’s world famous white wines. Along with his wife Sima who runs the operations of the winery, Doron created Sphera in Israel’s Judean Hills to prove that this ancient winemaking country is capable of making its own sensational white wines. The estate’s vineyards are planted in the valleys of Givat Yeshayahu which has an ideal microclimate for premium white winemaking. Cool breezes consistently blow through the valley even on hot summer days and cold air sinks to the valley floor at night, helping to keep plenty of freshness and aromatics in the grapes. This stunning white blend is composed primarily of Semillon along with Roussanne and Chenin Blanc. The vines are planted alongside the Shua stream on a mixture of alluvial, limestone and terra rossa or “red soils”. These help to add a subtle hint of minerality to the rich tropical fruit and citrusy notes which dominate the nose and palate. The finish is pure and aromatic with hints of honeysuckle and rose petals, making it a great aperitif or partner for delicate sushi, salads, fish or seafood dishes.
