Founded in 1985 by Gaspare Parusso, the Parusso winery is a family business located in Monforte d'Alba in the Bussia sub-region of Piedmont. The vineyards extend over 28 hectares in the Barolo wine area, within the Bussia, Mariondino, and Coste di Monforte crus. Parusso Metodo Classico is produced with Nebbiolo grapes vinified in white. The grapes are selected and harvested by hand from vineyards located at an altitude between 250 and 450 m. above sea level in the province of Monforte d'Alba. Here the grapes benefit from a southern exposure and soils of marly sandstone and limestone origin. Fermentation takes place with indigenous yeasts and, after vinification, the wine remains in the bottle on the lees for approximately 36 months, before disgorgement. This Piedmontese sparkling wine has a brilliant golden yellow color and a fine and persistent perlage. On the nose, it expresses aromas of ripe stone fruit and small red fruits. On the palate, it is fresh and elegant with a marked acidity. The finish is long and pleasant and recalls notes of raspberry and strawberry. It is a lively wine that goes well with fish-based dishes, even with tomato and is also excellent with salmon.
