The Nit de Nin project was started in the early 2000s by winemaker Ester Nin who later joined forces with Carles Ortiz and founded the family winery Nin Ortiz in 2008. The company, which owns about 18 hectares of vineyards, is dedicated to artisanal viticulture and complete respect for the environment. They work the vineyards with mules and apply biodynamic methods. Mas d'en Caçador is a red wine from Priorat produced in limited quantities from a blend of Grenache and Carignan. The grapes are sourced from vines of about 90 years old planted on licorella soils on large hillsides in the municipality of Porrera and grown according to organic and biodynamic practices. After manual harvesting, fermentation occurs spontaneously with natural yeasts and the finished wine then rests in French oak barrels for 14 months. This elegant Spanish red releases a broad and fragrant aromatic profile with floral notes and ripe red fruits on a background of Mediterranean herbs. On the palate, it is characterful and complex, fresh and smooth, with a medium body and a good refreshing streak. The finish is long and recalls mineral and spicy notes. Try it with pork.
