It is incredibly clean and precise, thanks to Louis Michel & Fils' no-oaking policy. Unlike the other Chablis wines that you might see from this winery, this wine was not sourced from a single vineyard. The Chardonnay came from eight premium locations across Chablis and is intended to capture the character of the entire region. Louis Michel & Fils winery has been a vital part of Chablis since the winery's foundation in the 19th century, helping to shape that pure, mineral character that is loved across the world. These days it is managed by Jean-Loup Michel and his nephew Guillaume Gicqueau-Miche, who source their grapes from a patchwork collection of 25 hectares in the heart of Chablis. Chiming notes of citrus fruit, peach and wet stone appear on the palate. This Chablis is an attractive lemon yellow in the glass, hinting at the fresh acidity that courses through it. It also has a round, dense mouthfeel, with a certain steeliness that is typical of the region. It is recommended to let this wine age in the bottle for one year, but you can easily keep it for longer. Consider pairing this Chablis with seafood, rabbit, or white meat.
