Nowadays, Guillaume Michel is at the helm, creating an immaculate selection of Chardonnay-based Chablis wines. “Vaudésir” is one of Chablis’ Grand Crus. It lies in a sheltered, basin-like valley and Louis Michel & Fils’ plot can be found right in the centre. Vaudésir wines are typically extremely focused, often exhibiting a rich, creamy mouthfeel and the unavoidable minerality that comes with Chablis. This Grand Cru is a perfect expression of the terroir. Notes of flint, rhubarb, pineapple and acacia flower appear on the nose. The palate is velvety and medium-bodied, with hints of brioche and butter gained from malolactic fermentation. The fruits were aged for at least 18 months in stainless steel tanks before being bottled. However, tropical fruits reign in the mouth - delicious notes of pineapple and rhubarb continue to the palate and mingle with flavours of coconut and peach. The finish is long, deeply refreshing, and will leave you wanting more. For maximum enjoyment, serve this wine chilled, with shellfish, grilled fish or asparagus.
