Domaine Guillon et Fils was founded in 1980 by Jean-Michel Guillon, a former Parisian engineer with a passion for wine and Burgundy. After an apprenticeship with legendary winemaker Henri Jayer, Jean-Michel began his project with around 2 hectares of vineyards. Today, the estate, which extends over around 40 hectares where Pinot Noir reigns supreme, is managed by Jean-Michel with his son Alexis. The work in the vineyard is meticulous and takes place with full respect for nature and the terroir. But what really makes this producer unique is the enormous attention paid to wine aging. Jean-Michel and Alexis follow the barrel-making process from start to finish and age all their wines in new oak to ensure the production of elegant wines with velvety tannins, which are ready to drink now but also capable of aging and evolving over time. Cuvée Mes Trois Fils is a Pinot Noir-based red produced as a tribute to Jean Michel's children, a testament to the importance of the family tradition of this winery. Its aromatic profile is expressive and complex with notes of berries and spices, followed by earthiness and undergrowth. On the palate, it reveals a delicious fruit character, with a well-integrated mineral vein and smooth tannins. It is rich, deep, and elegant with a long, delicately spicy finish. It is excellent with braised lamb or game birds.
