Based in the prestigious appellation of Gevrey Chambertin in Burgundy, Jean-Michel Guillon established his winery in 1980. A former engineer, Jean-Michel began with just two hectares of vineyards, and today he cultivates around 40 hectares spread throughout Gevrey-Chambertin. Today, the management of the estate is taken over by his son Alexis, who together with his father, continues a family winemaking tradition based on a passion for wine and the spectacular terroirs of Burgundy. The vineyards are meticulously tended and the work is mainly manual. In the cellar, vinification is carried out in a traditional manner with minimal human intervention. One of the particularities of this estate is the use of only new oak for the aging of the wines: a step that gives structure and complexity. In the glass, Gevrey-Chambertin Les Crais reveals a brilliant color with dark ruby tones. Its aromatic profile is broad and intense with notes of ripe berries, followed by hints of licorice and leather, and light balsamic and spicy touches in the background. On the palate, it is powerful, rich, and vigorous with supple tannins. It has excellent fruit concentration and a vibrant acidity that balances the overall taste. The finish is long and mineral. This is a characterful wine that will evolve well for over a decade. If you can't wait, try it with a rib eye or roast partridge.
