Rosemary, thyme, mint and bay leaf mingle with tart black fruits, such as blackcurrant and blackberry, and layers of spice. Saffredi is a bold blend of Bordeaux grapes: 80% Cabernet Sauvignon, 10% Merlot and 10% Petit Verdot harvested from sandstone soils at an altitude of 280 metres. Saffredi is the crown jewel of Fattoria Le Pupille. The winery was founded in 1985, by the pioneering winemaker Elisabetta Geppetti. Her property surrounds Pereta, a scenic medieval village overlooked by 2 hills: “Le Pupille”, or “The Eyes” that keep a careful watch over an inch-perfect grape-growing environment. It is a bright ruby colour in the glass, hinting towards its vibrant character. It exhibits a focused array of red fruits on the palate, strawberry, cassis and raspberry giving way to hints of baking spice and balsamic. It is rich and round, with chewy tannins and a prominent vein of acidity that elevates the underlying flavours of fresh herbs. The grapes spent 18 months maturing in barrels of new French oak, yet the wood is still subtly integrated, allowing the fruits to shine through. Pair this wine with a meaty pasta dish, tomato sauce, or a steak.
