Envinate Palo Blanco 2023

Envinate is the Spanish winery founded in 2005 by 4 winemaker friends (Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martinez) after graduating in enology from the University of Miguel Hernandez in Alicante. Born as a winemaking consultancy, Envinate has since become a project that focuses on the exploration of particular plots located above all in the regions of the Ribeira Sacra and the Canary Islands and on the production of deeply authentic wines that are full expression of the terroir. Palo Blanco is a fine wine from the Canary Islands produced with grapes of the native Listan Blanc vine from a 1.5-hectare vineyard at an altitude of 600 m in the Orotava valley. The soil is volcanic, rich in phosphorus, magnesium, and potassium, and capable of imparting its organoleptic characteristics to the wine. The hand-picked grapes are then pressed in full bunches in large concrete tanks. The wine is then aged for 10 months in 2500L oval foudres. Bottling is without clarification or filtration. This white wine has great minerality. Already on the nose, notes of wet gray slate and volcanic basalt can be felt, of course, mixed with aromas of green pears, sour plums, spicy lemon, and wet hay. On the palate, the minerality returns with saline and citrus notes. It is an ample wine, with lively acidity and a good body. The finish is elegantly salty and long. Perfect with seafood and Iberian-cured meats.
