Domaine Pierre Guillemot Savigny les Beaune Premier Cru Aux Gravains 2022

Cellar for up to 15 years. Decanting for up to 30 minutes before serving. This wine was crafted from about a quarter of a hectare of the Premier Cru Aux Gravains, a notably earthy vineyard near the village of Savigny. It is deep and savoury on the nose, with slightly reductive hints of burnt caramel, pure cranberry, raspberry, and notes of nutmeg, clove, and smoked meat. Domaine Pierre Guillemot is a small Burgundian winery, located in Savigny-les-Beaune’s picturesque town square. It is owned and operated by Pierre and Vincent, two brothers who source their fruits from 8 hectares of vineyards. They represent the sixth generation of Guillemot winemakers - their grandfather founded the winery in 1946, but the family obsession with grapes goes back much further. The Aux Gravain vines that form the basis of this concentrated red are approximately 50 years old. In the mouth, it is mineral-driven, thanks to the limestone-rich soils, and hints of cassis, sour cherry, and raspberry mingle on the creamy mid-palate. The tannins are dense and mouth-coating, bringing excellent structure and potential for ageing, and complementing the heightened acidity. Consider enjoying it with classic Pinot Noir pairings, such as beef bourguignon, mushroom burgers, or a fine cheese.
