It begins with a bouquet of warm soil, cigar box, nutmeg, clove, and a smattering of red hedgerow berries. Right now it is youthful, with hints of green herbs, but it will develop more complexity and character with some time in the cellar. Founded in 1946, Domaine Pierre Guillemot is a small winery, with 8 hectares of vineyards across the region of Burgundy. It is located in Saivgny-les-Beaune’s charming town square, where two brothers, Vincent and Pierre, craft their stunning range of red wines. They represent the sixth generation of Guillemot winemakers - the line goes all the way back to Philippe, who was a négociant. In the mouth, this well-rounded Bourgogne Pinot Noir is loaded with flavours of raspberry, cranberry, mushroom, warm spices, and slight etchings of minerality. It lies on the lighter-bodied side, with a crisp and youthful character - look for finely grained, oaky tannins and heightened acidity. A premium wine at a less-than-premium price, from an underrated part of Burgundy. Consider pairing it with soft, pungent cheese, a mushroom burger, or roasted turkey.
