Domaine Merlin is a Burgundy winery founded in 1987 in La Roche-Vineuse by Olivier Merlin and his wife and now run by their sons, Théo and Paul Merlin. Both in the vineyard and in the cellar, the company pursues a very respectful approach to the terroir to produce expressive wines with an artisanal character that reflect the greatness of this wine region. The Chardonnay grapes are hand-picked from a selection of vines located at an average altitude of about 280 meters in Chaintré and Vergisson. Here, the vines enjoy a south-east exposure and Quaternary clay-limestone soils. After the harvest, fermentation takes place in barrels and the wine then ages in oak barrels for about a year. The Pouilly-Fuissé from Domaine Merlin is a delicate and elegant wine with an energizing freshness and a broad and fragrant aromatic profile. On the nose, it reveals aromas of ripe peach and pear followed by delicate toasted hints. On the palate it is round and soft with a well-defined mineral vein and a good fruit concentration. The long and persistent finish recalls gentle savory notes. It is a wine capable of aging well for a few years, but can be enjoyed now with a mushroom risotto or roast chicken.
