Located in Santenay, in the heart of the Côte-d'Or, Burgundy, Domaine Jessiaume has a long winemaking tradition, having been founded in 1850, and purchased by François Le Bigot, current owner in 2020. The company, which has passed to organic certification, brings forward a philosophy of minimal intervention, favoring work by gravity, and the minimal use of sulfites. The Chardonnay grapes come from one of the historic plots of the Domaine: 0.77 hectares of vineyard with an average age of 40 years located in the Les Gravières cru. Here the soil rich in gravel and limestone of the Combe de Saint-Aubin and the south-east exposure guarantee the production of fresh and fruity wines characterized by a strong mineral vein. Santenay Premier Cru Les Gravieres Blanc has a light and clear color with lemon-yellow tones. The nose reveals elegant fruity aromas of apple, pear, and yellow plum, followed by hints of pastry and mineral notes. On the palate, it is medium-bodied and has a delicious juiciness. It is fresh, elegant, and round. The finish is long and persistent and recalls evident chalky notes. Try it with trout or veal filet.
