Domaine Bott Geyl is an ancient family-run Alsatian estate located in the village of Beblenheim, a short distance from Colmar, led by Jean-Christophe Bott since 1993. The company, whose roots date back to the end of the 18th century, owns about 14 hectares of vineyards distributed in various plots and cultivated biodynamically. Their wines are widely appreciated for their traditional style and expressive character. This light and easy-to-drink sparkling wine is a blend of Pinot Blanc, Chardonnay, and Pinot Noir grapes. After manual harvesting and the first fermentation with indigenous yeasts in steel, the wine undergoes a second fermentation in the bottle according to the Classic Method and remains on its yeasts for 24 months. The result is a balanced wine with little dosage that combines the softness of Pinot Blanc, with the minerality of Chardonnay and the structure of Pinot Noir. In the glass, it shows a straw yellow color brightened by a fine and persistent perlage. Its aromatic profile is fresh with notes of white fruit and citrus, followed by hints of honey, and brioche. On the palate, it is lively and mineral, with a light body and a pleasant refreshing streak. It is perfect as an informal aperitif and also pairs well with onion tarte tatin and, of course, with traditional Alsatian Flammkuchen.
