Located in Chablis, Domaine Besson is a family-run wine estate that extends over 21 hectares of vineyards, spread across several appellations. The estate was founded in 1902 by Eugene Besson and is now managed by the fourth generation of the family. The Chardonnay grapes come from a plot of around one hectare located in the Premier Cru Mont de Milieu on clay/limestone soils. After harvesting and a slow low-pressure pressing, fermentation takes place at a controlled temperature in steel for 95% of the must, and in oak barrels for the remainder. The finished wine then rests on the lees for 18 months, partly in steel and partly in barriques. The result is a distinctive and elegant wine that maintains a fresh and easy-drinking character. The Chablis 1er Cru Mont de Milieu from Domaine Besson has an intense yellow color brightened by brilliant golden reflections and a fruity and fresh aromatic profile. On the nose, it reveals aromas of citrus and stone fruit, aromatic herbs, and mineral notes. On the palate, it is silky and balanced with a well-defined mineral vein and a refreshing acidity. The finish is long and smooth. Try it with baked scallops.
