Located in western Paso Robles, in the Adelaida District, Daou Vineyards produces a wide range of acclaimed single-varietal and Bordeaux-style blends. Founded in 2007 by the Daou brothers of Lebanese origin, the winery enjoys a strategic location, with vineyards at over 600 meters above sea level, characterized by a unique terroir. The Cabernet Sauvignon grapes come from the Patrimony Estate vineyards, renowned for their terroir capable of producing wines with high phenolic content. After careful grape selection, fermentation occurs spontaneously with indigenous yeasts, and the finished wine then ages for 30 months in the finest new French oak barrels, ensuring the wood's complete integration into the wine's flavor palette. In the glass, DAOU Patrimony Cabernet Sauvignon reveals an intense, deep color with dark ruby hues. Its aromatic profile is broad and complex, with notes of red and dark fruits such as pomegranate, currant, blackcurrant, blackberry, and blueberry, followed by tertiary notes of spice, tobacco, and chocolate. On the palate, it is fruity and vigorous, full-bodied and rich, concentrated yet well-balanced by a lively, refreshing acidity. It has a long, persistent finish that evokes notes of cocoa and coffee. It is a wine with a strong character, demanding a hearty pairing. Try it with a Wagyu beef burger, chili con carne, or venison stew.
