Spread over approximately 50 hectares of vineyards, Chateau La Negly is a Languedoc winery owned by the Paux-Rosset family who, after purchasing it in 1992, completely redeveloped the vineyards. The company is located in the La Clape wine area, in a strategic position a short distance from the sea, where the vines enjoy excellent conditions for the production of quality wine. Since 2006, the estate has also included the Domaine de Boede, with its 25 hectares of vineyards. La Clape La Falaise Rouge is a blend of Syrah, Grenache, Carignan and Mourvèdre, coming from the south-eastern slopes of the Clape Massif on the typical soils of the area, of a sandy-clayey limestone nature, very stony. The harvest is manual with careful selection of the grapes. The Syrah vinifies in wooden vats and ages in barrels for 12 months, while the other grapes vinify in cement tanks and age in wooden vats. The wine has an intense and brilliant ruby color. On the nose, it reveals a fragrant aromatic profile with notes of blackberry and raspberry, cocoa and licorice, toasted hints, and black olives. On the palate, it is round and concentrated, powerful and velvety with soft and ripe tannins and a long finish that recalls notes of licorice. Try it with beef filet in porcini mushroom sauce.
