Drink now or cellar for up to 10 years. Serve chilled. Nathalie Falmet is based in the Aube region of Champagne and has been making wine for her namesake boutique Champagne house since 1999. Falmet is known for her innovative and sustainable approach to winemaking. She uses only organic and biodynamic grapes, and her vineyards are carefully tended to produce grapes of exceptional quality. She is also committed to low-intervention winemaking techniques that allow the natural flavors and aromas of the grapes to shine through. This signature Blanc de Noir Brut is a blend of Pinot Noir and Pinot Meunier grapes from the Le Val Cornet vineyard which are carefully selected at optimum ripeness and harvested by hand. The grapes are then fermented in stainless steel tanks and aged in oak barrels before undergoing a secondary fermentation in the bottle. In the glass you can expect a beautiful golden color with a fine and persistent stream of bubbles. On the nose the Champagne has a complex bouquet of citrus, apple, and white floral notes with hints of toasted bread and honey, while on the palate it is fresh, vibrant, and well-balanced with a long and satisfying finish. The elegance of this Brut Champagne makes it a great choice to enjoy as an aperitif or alongside fresh salads, seafood, sushi or spicy dishes.
