Nathalie Falmet is a boutique Champagne house located in the Aube region of Champagne, This respected house is named after its founder and winemaker who has been making Champagne since 1999. Falmet is known locally for her innovative and sustainable approach to winemaking, using only organic and biodynamic grapes which enable her to in turn produce top quality wines. This classic house cuvee is made from a blend of Pinot Noir, Chardonnay, and reserve wines from previous vintages to give extra complexity and character. The wine undergoes a meticulous vinification process that includes fermentation in stainless steel tanks followed by aging in oak barrels and a secondary fermentation in the bottle. Nathalie then adds a very low dosage to add a touch of smoothness. The result is a bright and bubbly Champagne with a fine and persistent mousse and a complex bouquet of floral, citrus fruit and lightly toasted notes. It’s a versatile wine that pairs well with a wide range of foods including fresh seafood, poultry, and soft cheeses. This Brut Champagne is also an excellent aperitif and can be enjoyed on its own to celebrate a special occasion or simply to share with family and friends.
