Champagne Dom Perignon Luminous 2013

Enjoy it now, or cellar for up to 15 years. No need to decant before serving. The Dom Pérignon name is impossible to avoid on any serious journey through the world of Champagne. These wines have made their way from the Benedictine abbeys of the 17th century, to the courts of French kings, to the tables of people all around the globe. The Dom Pérignon Champagne house played a large part in creating the legend of Champagne and setting the gold standard for the entire region. Luminous opens up with a silky, effervescent mousse, and scents of blackcurrant, blackberry, buttered croissant, lemon balm, and hazelnut. It is a careful combination of Champagne’s two main grapes – Pinot Noir and Chardonnay. A thread of orange peel continues from the nose to the palate, where the wine is medium- to full-bodied and layered with texture. Incisive acidity and chalky, grippy minerality give it plenty of structure. Luminous is not just collectable for its striking bottle – it can also be aged in the cellar for some time. Look for further notes of juicy pear, stone fruit, freshly baked pastries, and toasted nuts. The finish is long, with a cleansing mineral edge. Pair Luminous with a fine lobster dish, caviar, or cheesecake.
