Drink it now or cellar for up to 10 years. No need to decant. Serve it chilled. Located in Bar-en-Seine, the Champagne Devaux winery was founded in 1846 by brothers Jules and Auguste Devaux. The company remained in the hands of the Devaux family until 1978, when it was handed over to Union Auboise due to the lack of heirs. Today, it is managed by Laurent Gillet. Coeur des Bar Blanc de Noirs is made with only Pinot Noir grapes from vineyards located in the Cote des Bars, at least 15 years old, some of which are in organic conversion. Fermentation takes place in stainless steel vats, and 20-25% of reserve wine, aged in oak barrels, is then added to the base wine. The result is an extremely balanced and elegant cuvée with a golden color with amber reflections and a fine and persistent perlage. On the nose, the wine reveals an intense and broad automatic profile with fruity notes of pear, apple, and ripe peach, followed by honeyed, and brioche hints. On the palate, it is deep and generous, full and powerful. It has an excellent fruit concentration and a refreshing acidic vein that returns in the long finish. It is excellent as an aperitif, but also works well with food: try it with poultry with truffles or with linguine with squid ink.
