Champagne Devaux Cuvee D

The Champagne Devaux house is one of the region's historic producers with a tradition dating back to the 19th century when it was founded by brothers Jules and Auguste Devaux. Located in the Cote-de-Bar, the estate, under the control of Union Auboise since 1987, extends over approximately 140 hectares of vineyards, from which it produces a wide range of high-prestige champagnes. Champagne Cuvée D is the house's flagship wine, produced with a blend of Pinot Noir and Chardonnay from the Côte de Bar and the Côtes des Blancs, Montgueux and Côtes des Bar respectively. After fermentation (partly in stainless steel and partly in barrels), and a partial malolactic fermentation, reserve wine is added to the base wine for approximately 35%. The finished wine then rests in the bottle for a minimum of 5 years, before disgorging, dosing, and a further 6 months in the bottle. The result is a balanced and elegant wine characterized by a broad and fragrant aromatic profile that reveals floral and toasted notes, slightly spicy hints, and nuances of brioche and bread crust. On the palate, it is fresh and citrusy, round and lively with a pleasant acidic vein that gives balance. The fine bubbles give it an almost creamy consistency. The finish is long and recalls notes of brioche. It is perfect as an aperitif or paired with risotto, white fish, or seafood.
