From Black To White is a stunning blend of four indigenous Italian grape varieties, Rondinella Bianca, Gold Traminer, Kerner and Incrocio Manzoni, that come together harmoniously in this fresh and fragrant white wine. The nose offers enticing hints of lime, white peaches, and Mediterranean herbs, while the first sip reveals a light body, bright acidity and touches of minerality along with ripe stone fruit and mango flavours. From Black To White is the work of talented Veneto winemaker Celestino Gaspari who comes from a family of farmers and honed his viticultural talents while working with the legendary winemaker Giuseppe Quintarelli. After many years of working as a consultant winemaker and launching over a dozen new wineries in the Veneto, Celestino finally decided to begin his own project and launched Zyme in his garage. The wine takes its name from winemaker Celestino’s experimentations with the Rondinella grape. In 1999 Celestino noticed an old Rondinella vine which had some clusters of grapes which were white in colour. Intrigued, he began experimenting to try and create Rondinella grapes that were completely white. After a few years he finally succeeded and named this unusual wine after the journey of making white grapes from a black grape variety.
