Cellar for up to 10 years. No need to decant it, but best to open it half an hour before service. Woodlands is a small family-owned business founded by David and Heather Watson in 1973, in the Wilyabrup Valley. Today the company extends over 10 acres and is one of Margaret River's most important producers. The grapes are grown organically and, in the cellar, they are selected with extreme care. A small part of the grapes is pressed in whole bunches, to add finesse and structure. The wine is then fermented in the best French oak barrels, of which 20% are new. The Wilyabrup Valley Chardonnay is a bright wine with a brilliant straw yellow color. The nose is complex and intriguing, with hints of yellow fruits, quince, pear and peach, tropical notes of pineapple, and mineral flint resulting from the fermentation in barrique. On the palate, the fruity notes return with juicy intensity and the wine displays generous depth and complexity. The finish is long and elegant, with a nice minerality. A classic Chardonnay that shows excellent aging potential. It is the perfect wine for Ramen or delicious vegetarian tarts, but it can also go very well with chicken and turkey.
