Waterford Cabernet Sauvignon 2016

Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. Owned by the Ord family, the Waterford Estate is located in the prestigious Stellenbosch wine region, and more precisely in the picturesque Blaauwklippen Valley. The estate covers 120 hectares, of which only 60 are planted with vines, perfectly integrated into the local flora. The cellar is built around the courtyard, to allow visitors to fully enjoy the wine tourism experience, closely observing the various winemaking processes. Waterford Cabernet Sauvignon also includes very small additions of Petit Verdot, Cabernet Franc, and Merlot. The grapes are grown on the slopes of Mount Helderberg, on a terroir particularly favorable to Cabernet Sauvignon. The altitude of the high vineyards and the proximity of the ocean guarantee a temperature range that favors good acidity and results in particularly well-balanced wines with excellent aging potential. The finished blend ages for 18 months in French barriques. The wine reveals aromas of ripe red fruit and plums, earthy and tobacco notes, followed by some mineral touches. On the palate, it is well-structured, with a good concentration of flavors and firm tannins. The finish is long and fresh with mineral notes of graphite. It is a powerful and elegant wine that goes very well with grilled red meat and lamb.
