Cellar for 15 years or more. Decant for up to an hour before serving. Founded in 1997 by a trio of talented wine-makers, Vilafonté winery produces some of South Africa's highest-quality wines. It is located in the Simonsberg Mountains, an appellation with a bona fide claim to fame. The oldest soil in the world can be found here, providing an ancient foundation for stellar vines. Vilafonté grapes are sourced exclusively from vineyards owned by the winery. Early in the winery’s life, wine-maker Zelma Long realised that their vineyards gave rise to two different styles of Bordeaux blend- the first was big and powerful, giving rise to Series M. The second was smoother, juicy and well-rounded - this is Series C. Series C is a playful blend, a mixture of Cabernet Sauvignon, Merlot, Malbec and Cabernet Franc. While it is dry and full-bodied, it shows definite hints of sweetness in its profile. The nose is packed with dark fruits, cassis, black cherries and plum. A mouthful will reveal similar fruits, with deeper notes of cedar, liquorice and a green botanical edge. The wine spent almost two years ageing in French oak barriques and has plenty of time to develop further in the bottle. Series C will be great company for rarer birds, such as duck, or rich tomato-based dishes.
