Drink now or cellar for up to 4 years. Serve chilled. Venus La Universal is a maverick Catalan wine project founded by famed Priorat winemakers Sara Pérez and René Barbier in 1999. Their small estate has 4 hectares of prime vineyards in DO Montsant close to the town of Falset and they also buy selected grapes from other local growers. Everything they do is organic, and they use sustainable methods wherever possible. La Solució is a unique field blend rosé that gets its color from a dash of Garnacha, Cariñena, and Tempranillo. Also growing alongside the red grapes are classic Catalan grapes like Garnacha Blanca, Garnacha Gris and Macabeo which add even more complexity. The young wine is aged in a huge 4,600 litre oak foudre and clay amphora to allow the beauty of the varietals to shine through. In the glass there’s an inviting deep pink hue accompanied by notes of wild strawberries, cranberries and crushed cherries along with hints of dried Mediterranean herbs and citrus peel. This is a superb rosé to serve alongside traditional Spanish tapas like chorizo, aged Manchego, cured meats, grilled octopus and patatas bravas thanks to its medium body, firm structure, and punchy flavors.
