Vassaltis is a renowned Greek winery founded in Santorini in 2016 by economist Yannis Valambous using the vineyards inherited from his father. The winery is run by talented winemakers Yannis Papaeconomou and Elias Roussakis who, together with Valambous, produce excellent quality wines by combining traditional winemaking with modern technology. The Assyrtiko grapes for the production of this wine come from the vineyards of Pyrgos, Megalochori, and Vourvoulos. After manual harvesting and whole bunch pressing, fermentation takes place in oak barrels where the wine rests on its own yeasts before bottling. Alcyone Cuvee Mythologique is a wine with great character, capable of aging well in the cellar for at least a decade. It has a clear and bright color with lemon yellow tones and an intense and broad aromatic profile with notes of citrus (especially grapefruit and lemon) and vanilla, orange peel, and brioche on a mineral background. On the palate, it is crisp, fresh and complex. It is juicy and mineral with a well-balanced acidity and a long finish that recalls notes of honey and mineral scents. It is excellent with fish or grilled white meats and seafood.
