It is made from 100% Saperavi, sourced from Solomnishvili Winery’s 0.2-hectare plot in the heart of the Kakheti region. Before release, it spent 18 months ageing in French oak barrels. Solomnishvili is a boutique family winery, famed for its small-scale, high-quality production. It is led by the esteemed winemaker Giorgi Solomnishvili, who farms the family’s vineyards by hand. It lies within the fertile Alazani River Plain, in the city of Telavi, which is Georgia’s viticultural capital. The Solomnishvili family take an unpretentious approach to winemaking - Giorgi’s wines are top-class, but he always keeps gastronomic enjoyment firmly in mind. Revolution begins with a blast of black and red fruits - juicy cherries mingle with notes of damson plum, and a background of cocoa, black pepper and liquorice. The tannins are firm yet polished, and a vein of vibrant acidity leads the experience to a lengthy, spiced finish. It is a velvety, smooth-drinking wine overall, ideal for pairing with lamb shashlik, beef stew, or aged cheese.
