Founded by cousins Martin Shaw and Michael Hill Smith in 1989, Shaw and Smith is a family-owned winery located in the Adelaide Hills of South Australia. The vineyards extend over 55 hectares divided into 3 plots (Balhannah, Lenswood, and Piccadilly), planted with Chardonnay, Sauvignon Blanc, Pinot Noir, and Shiraz grapes, which give their best in these soil and climate conditions. The Chardonnay grapes are selected and harvested by hand from the Lenswood vineyard, located at 500 meters above sea level on clay-loam and shale soils. The vines are over 20 years old and enjoy eastern exposure. Fermentation takes place in 500-liter puncheons, 30% of which are new. The finished wine rests in oak for at least 10 months. Lenswood Chardonnay is an elegant white wine. It has a light straw color with golden reflections and a broad aromatic profile with citrus and nectarine notes, green apple and white flowers, and some mineral and herbaceous hints. On the palate, it is linear, fine, and delicate with a pleasant fruity intensity and a good structure. It is round and fresh and reveals excellent aging potential. Excellent with roast chicken, veal escalopes, and scallops.
