Cellar for 15 years or more. Decant for an hour before serving. The Rosso Ca del Merlo is a “Super Valpolicella” of sorts, a classic, powerful blend that breaks the rules of the Valpolicella DOC. It is crafted from the traditional Corvina, Corvinone, and Rondinella grapes, along with a 15% portion of Cabernet Sauvignon Cabernet Franc, Nebbiolo, Croatina, and Sangiovese - all were harvested from a single vineyard in the heart of Veneto. Giuseppe Quintarelli and his esteemed family have been trendsetters for the regions of Valpolicella and Amarone for over a hundred years. While they are known for their staunchly traditional approach, this red breaks the mould slightly. It begins with rich scents of cassis, purple flowers, orange peel, and woody spice. On the palate, Ca del Merlo expands into silky tannic textures, with a dry, spicy purity. Although the grapes were double fermented with leftover Amarone skins in the classic Valpolicella Ripasso style, it is remarkably fresh, with tart citrus notes and juicy hedgerow berries. The wine spent a further 7 years ageing in casks of Slavonian oak before release. For lovers of Valpolicella who are seeking a new twist on a classic. Consider pairing it with beef stew, pizza, or pasta with tomato sauce.
