The Pinot Noir grapes come from a plot in the municipality of Cormot-le-Grand, where the vines, planted between 1958 and 1988, enjoy clay-marl soil and a north-west exposure. Fermentation occurs spontaneously with indigenous yeasts and the finished wine then rests for a year in used barrels and for another 6 months in a tank before being bottled and released onto the market. On the nose, it reveals a broad and fragrant aromatic profile with notes of cherry and wild berries, followed by slightly spicy hints and some nuances of undergrowth.
