PerSe wines is an Argentine winery located in the Uco Valley, and founded by David Bonomi and Edgardo Del Popolo in 2012. The winery produces wines of extraordinary quality from just over two hectares of vineyards located in the Gualtallary sub-region. The Malbec grapes (with small additions of Cabernet Franc) come from La Craie, the narrowest and coolest of the PerSe vineyards. Here the vines, planted in 2013 and grown organically, enjoy southern exposure and soils with a high limestone content. Irrigation is virtually non-existent, resulting in low yields and wines of great concentration. After manual harvesting, fermentation in barrels, and a long period of maceration on the skins, the finished wine rests in barrels for 16 months. Produced in limited quantities, PerSe La Craie Gualtallary is a robust and characterful wine that can benefit from a little oxygen before tasting to best express its bouquet. On the nose, it reveals fragrant floral notes of violet and rose, along with intense aromas of red fruits and tobacco leaves in the background. On the palate, it is powerful and rich with a strong acidic vein that refreshes the palate and balances the taste. It is elegant, with a long, concentrated finish. Try it with beef tacos or prime ribs.
