Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. Passopisciaro is a Sicilian winery located in the province of Catania. Founded in the early 2000s by Andrea Franchetti, the company produces volcanic wines from vineyards located between 800 and over 1000 meters above sea level, with local and international vines. With his intuitions, Franchetti and his cellar played a fundamental role in the rediscovery and popularity of Etna wines. The Nerello Mascalese grapes are selected and harvested on the northern slope of Etna, from ancient vineyards located at different altitudes: the higher ones characterized by gravelly soils, the lower ones by a greater presence of older lava dust. The different characteristics of altitude and terroir contribute to the creation of a complex wine with a unique character. The finished wine rests for 18 months in concrete tanks and large oak barrels. Passorosso has a bright and lively color with ruby-red nuances. On the nose, it is intriguing with fragrant aromas of dried flowers and spices, ripe cherries and aromatic herbs, and a light ferrous vein. On the palate, it is soft and has a good structure. It is an elegant and concentrated wine, juicy and well-balanced. The tannins are firm and the finish is persistent. It is ready to drink now but can evolve beautifully for several years. Try it with roasted guinea fowl or mature cheeses.
