Considered a rising star in the Burgundy wine scene, Nicolas Rossignol is the fifth generation of a family of winemakers and began his career on the family estate Domaine. Rossignol-Jeanniard. After various experiences in France and abroad, in 1997 he decided to acquire 3 hectares of vineyards and create his own winery. Today the estate extends over 17 hectares, worked according to biodynamic-inspired principles. The Premier Cru En Chevret has a strategic location, given its proximity to Les Caillerets, the most famous Premier Cru of Volnay. Here the Pinot Noir vines, aged between 40 and 60 years, enjoy an amazing terroir with marly limestone soils with pebbles that favor drainage, and a gentle slope. The grapes are selected and harvested by hand. Vinification takes place traditionally and the wine ages for about 20 months in oak barrels. The wine has a clear color with dark cherry tones. On the nose, it reveals a ripe and fragrant aromatic profile with fruity notes of cherry, plum, and berries, hints of wood, and spices. On the palate, it is soft and smooth, dense and juicy. It has a medium body, velvety tannins, and a refreshing well-balanced acidity. The finish is long, elegant, and slightly spicy. It is a classy wine that can be cellared for several years, but can also be enjoyed now with a good roast lamb.
