Louis Michel & Fils is one of those rare wineries that has never lost its sense of continuity or excellence over the years. The Michel family have been making wines in Burgundy since the 19th century, and are firmly tied to the world-famous region. Their winery is located amidst the most esteemed pieces of land in Chablis - and the short journey from vineyard to cellar makes the wine even more special. Of all the Premier Crus in Chablis, “Montée de Tonnerre” is possibly the greatest, contributing wine with careful elegance and characteristic minerality. Incumbent wine-maker Guillaume Michel harvests grapes from an entire slope in this vineyard, located on the right bank of the Serein river. Serve this wine slightly chilled to unlock its full bouquet of zesty citrus fruits, green apple, chamomile and focused minerality. It’s a classic, well-rounded taste of Chablis, with an electric undercurrent of acidity and steely notes of flint and sea salt. On the palate, juicy notes of melon, lemon and apple come to the fore, with hints of white flowers and oak-imparted smoke. Time in the cellar will serve it well, but it is perfectly enjoyable in its youth. Consider serving it with delicate seafood, such as poached fish, or a creamy asparagus dish.
