La Chablisienne consists of roughly 300 producers, and it is one of the largest cooperative wineries in France. Situated in Chablis, it was started by local winemakers in the early 1920s to support themselves during that time of normal financial hardship. It has since expanded and also bought Château Grenouilles. The cooperative has adhered to this philosophy of allowing the winemakers control over how they will make their wine since 1950. L'Homme Mort is a Chablis with masculine character produced from the most peripheral Premier Cru Fourchaume vines (about 25 years old) and grown on typical Chabliscian soils of Kimmeridgian clay terroirs for which this appellation is known. Fermentation occurs in barrels and vats, and after that the wine is left for 12 months on the lees to acquire structure and complexity. In the glass, it's a light golden-hued color with a fragrant nose that's all about citrus, green apple, pear, and a bouquet of white flowers with a side of minerals. It tastes like a fresh breeze with a kick and it has got amazing acidity. The finish is all smooth and elegant, like a wine that knows exactly what it's doing.
