La Chablisienne Chablis Le Finage 2022

Le Finage begins with a shy nose of vanilla spice and brown sugar, expanding into full-bodied notes of pear, lemon zest, vegetation, and green apple as it breathes in the glass. It is a beautiful straw yellow in colour. The Chardonnay was harvested from multiple sites around the Chablis, resulting in a multifaceted expression of the famous Burgundy appellation. La Chablisienne was founded approximately a century ago in 1923, as a grape growers cooperative. Since becoming a fully fledged winery in the 1950s, it has grown to become one of the largest producers in the region, with unlimited access to Chablis’ finest vineyards. A peculiarity that sets La Chablisienne apart is the winery’s method of receiving the grape harvest in the form of unfermented grape juice, allowing for complete creative control over the wine. On the palate, Le Finage is joyous and perfectly balanced. The acidity creates a vibrant texture, elevating flavours of citrus fruit, quince, ripe pear, honeysuckle, and butter. It is also marked by a strong vein of salinity, adding pure, mineral depth to the palate. It spent about 6 months ageing on the lees before release. Consider pairing Le Finage with soft cheese, roast chicken, or a vegetable ravioli.
