The Morini family has been working in the wine business for several decades, but it was only in the 90s that they decided to build a modern cellar and produce their own wines under the Ilatium Morini label. Today the company, managed by 7 brothers and cousins, cultivates 40 hectares of vineyards distributed between the Valpolicella and Soave areas, producing excellent quality wines widely appreciated by the public and critics. The Corvina, Rondinella, Croatina, and Oseleta grapes are harvested by hand and, after a 2-3 day cryo-maceration, fermentation takes place at a controlled temperature. The finished wine is finally aged in new oak for 12-15 months and then left in the bottle for another 6 months before being released onto the market. Campo Prognai Valpolicella Superiore is a structured and intense wine. Its aromatic profile is complex and ripe with notes of dark fruit and sweet spices. In the mouth, it is powerful, warm, and harmonious with fine tannins and a subtle acid vein that balances everything. The finish is long and fruity. It is a full-bodied wine that pairs perfectly with red meat, roasts, and mature cheeses.
