Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Founded in the late 1990s by Keith and Alison Hentschke, Hentley Farm is a Barossa Valley winery producing award-winning wines from its approximately 150 acres of estate vineyards spread across Seppeltsfield in the hills overlooking the banks of Greenock Creek. The Shiraz grapes are sourced from various plots of the estate, each with distinct microclimates, altitudes, and exposures. The vines are rooted in red clay soils with crushed limestone, siltstone, and bluestone subsoils. After vinification, the wine rests in French oak barrels (15% new) for approximately 15 months before bottling. In the glass, the Hentley Farm Shiraz reveals a dense and deep color with purple tones. Its aromatic profile is intense and broad with notes of plum, blueberry, and blackberry, hints of vanilla, cedar, and licorice, and some peppery touches on the finish. On the palate, it is powerful and rich, concentrated and full-bodied with a lively and energetic acidity that balances and refreshes the palate. The tannins are ripe and well-integrated and the finish is long and fruity. Try it with a spicy beef stew or grilled red meat.
