Located in Burgundy, and more precisely in Mercurey, in the heart of the Côte Chalonnaise, the Henri Champliau winery was founded in 2016 by Alexandre Graffard, who named it after his grandfather. The company produces sparkling wines in the Burgundy style, following the traditional method, from Pinot Noir and Chardonnay grapes. Brut Authentique is a blend of Pinot Noir and Chardonnay, where the former is clearly dominant, giving power and complexity to the wine. The addition of Chardonnay instead brings freshness and a lean character. The grapes are selected and harvested by hand from vineyard plots dedicated only to the production of Crémant. After vinification, the wine is bottled for secondary fermentation, according to the Champenoise method (the same as Champagne) for approximately 12 months. This elegant Crémant de Bourgogne shows a clear and brilliant straw color, enlivened by a fine and persistent perlage. Its aromatic profile expresses the typical red fruit notes of Pinot Noir, followed by notes of quince and green apples. On the palate, it is fresh, fruity and long with a delicate mousse. It is the ideal wine for an informal aperitif or to accompany seafood recipes or white meat.
