Located in the Margaret River wine region of Western Australia, Fraser Gallop Estate was founded in the late 1990s by Nigel Gallop, a former technology entrepreneur with a passion for French and Californian wines. The estate sits on approximately twenty hectares of vineyards at the highest point of the Wilyabrup wine district and benefits from a mild climate thanks to the proximity of the Indian Ocean. Cabernet Sauvignon grapes are carefully selected and hand-picked from the best sections of the vineyard. After vinification, which takes place in lightly toasted 500-liter barrels, the finished wine rests for 19 months in new French oak before bottling, to ensure a perfect balance of fruit and oak. Palladian Cabernet Sauvignon is a concentrated and characterful wine that shows excellent aging potential. It has a bright color with ruby tones and crimson nuances. Its aromatic profile is intense and elegant with fragrant fruity notes of dark cherry, mulberry, blueberry, and cassis, followed by layered hints of cedar, mulberries, vanilla, and aromatic herbs, and a light undertone of black olives. On the palate, it is juicy and structured, complex and stylish, with a fine tannic backbone and a well-integrated acidity that adds liveliness. The finish is long and slightly spicy. Have it with grilled red meat.
