The François Carillon estate is based in the AOC Puligny Montrachet, where his family has been cultivating vines since 1500. After years of working in the family business, Francois decided to undertake a solo project, dividing the family vineyards with his brother. His estate now extends over approximately 16 hectares, where Chardonnay reigns supreme. In just a few years, Francois Carillon has quickly earned a reputation for his refined, high-quality wines. Puilgny-Montrachet is a long-lived and very elegant wine produced with Chardonnay grapes from a vineyard of four hectares, distributed in 8 different locations, Derrière la Velle, Reuchaux, Corvée, Levrons, Aubues, Tremblots, Les Noyer Bret and Les Rousselles. The vines, aged between 19 and 49 years, are rooted into clay and limestone soils. The finished wine rests in oak barrels for at least 12 months followed by a further 6 months in steel tanks. The wine reveals a fragrant aromatic profile with pleasant fruity notes of citrus and stone fruit, floral aromas, and some hints of butter and hazelnut. On the palate, it is voluminous and concentrated, fresh and balanced. It has a lively and well-integrated acidity and a long and elegant finish. Try it with roast chicken or lobster.
