Cellar for up to 10 years. Decant for up to an hour before serving. This is a rare Spanish wine, an unusual blend of native Canary Island grapes grown in volcanic soils. It is mostly Listan Negro (50%), followed by 48% Negramoll and 2% Listan Blanco. Scents of red currant, cherry, and cranberry mingle on the nose, with hints of clean minerals and dried herbs. Envínate translates to “wine yourself”, and the concept for the winery was born in Alicante in 2005, where the four head winemakers met at university. The team of four aims to create wines with a fresh, raw character, which is achieved by leaving the vines wild and interlined, and harvesting grapes solely by hand. The project spans from the Canary Islands in the south to Ribeira Sacra in the north, both Atlantic-tinged terroirs with untapped potential. Juicy and extremely drinkable, La Santa de Ursula is loaded with flavours of blackcurrant, red berries, leather, and strong minerality. It is tense and quivering in the mouth, with finely grained tannins. The finish is long, with underlying notes of spice. It shows a different side of Spain, crafted with great skill. This wine is ideal for pairing with game meat, chorizo sausage, or hard and pungent cheese.
